Karuveppilai Podi

Savor the exquisite flavors of Karuveppilai Podi, a versatile and aromatic spice blend that brings the essence of curry leaves to the forefront. This traditional South Indian recipe combines a medley of roasted lentils and spices, creating a delectable addition to rice, idli, dosa, or any dish that calls for an extra burst of flavor.


Ingredients:

  • 100g urad dal
  • 30g curry leaves
  • 1 tbsp cumin seeds
  • 10 dry red chillies
  • A pinch of asafoetida
  • Groundnut oil for cooking

    For Tempering:
  • 1/2 tsp mustard seeds
  • 10 cashew nuts
  • Peanuts, as required
  • 1 tbsp ghee
  • Salt, as required
  • Oil, for tempering

    For the Spice Blend:
  • 1/2 cup urad dal
  • 1/2 cup split gram lentil (moong dal)
  • 1/2 cup Bengal gram dal
  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tbsp black pepper
  • 2 tbsp black sesame seeds
  • 2 tbsp white sesame seeds (do not grind)
  • Rock salt, as required

    Instructions:
  1. In a pan, dry roast 1/2 cup urad dal, 1/2 cup split gram lentil (moong dal), and 1/2 cup Bengal gram dal until they turn golden brown. Set aside to cool.
  2. In the same pan, dry roast 2 tbsp coriander seeds, 1 tbsp cumin seeds, and 1 tbsp black pepper together. Set aside to cool.
  3. Heat 2 tsp groundnut oil in a pan, add 30g curry leaves, 25 dry red chillies, 1 tsp asafoetida, and roast until the curry leaves become crisp.
  4. In a grinder, blend the roasted lentils, roasted spices, and the curry leaves mixture until you get a coarse powder. Add 2 tbsp black sesame seeds and rock salt as required. Mix well.
  5. For the tempering, heat 1 tbsp ghee and a little oil in a pan. Add 1/2 tsp mustard seeds, 10 cashew nuts, and peanuts as required. Cook until the cashews and peanuts turn golden brown.
  6. Pour the tempering over the spice blend and mix well. Finally, add 2 tbsp white sesame seeds without grinding them.
