Indian Spice Mix for Sautéed Vegetables

 


Ingredients:

  • 1 part cumin seeds
  • 1 part coriander seeds
  • 1/2 part turmeric powder
  • 1/2 part red chili powder (adjust according to your spice tolerance)
  • 1/2 part garam masala
  • 1/4 part asafoetida (hing, optional)
  • 1/2 part amchur (dried mango powder, optional)
  • Salt to taste

Steps:

  1. If you are using whole cumin and coriander seeds, lightly roast them in a dry pan until they are fragrant, then grind them into a powder using a spice grinder or a mortar and pestle.
  2. Mix the cumin and coriander powders with the rest of the spices until well combined.
  3. Your spice mix is ready to use.

To sauté vegetables:

  1. Heat some oil in a pan.
  2. Add a teaspoon of mustard seeds and let them crackle.
  3. Add some chopped onions and garlic (if you wish) and sauté until they're soft and slightly browned.
  4. Sprinkle 1-2 teaspoons of the spice mix over the onions and garlic, stir well, and let it cook for a minute to release the flavors.
  5. Add your choice of chopped vegetables and sauté until they are cooked to your liking.
  6. Taste and adjust the salt or spices as needed. Garnish with some chopped fresh cilantro leaves before serving, if desired.
